Sweet Potato Balls

Sweet potatoes are very healthy! Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. I mean, need I say more! These are the best carbs to eat in my opinion and they taste like a treat :)

Ingredients :
- 1 medium steamed sweet potato ( peeled)
- 2 cups of Almond flour
- 1 tbsp of vanilla protein powder
- 3 tsp baking powder
- 3 egg yolks
- 2 tsp of raw honey
- 3 tbsp coconut flour
- 3/4 cup of unsweetened coconut flakes
Directions:
1. Steam potato and peel and smash in bowl. Smash until there are no chunks left. Similar to baby food
2. Add in all other ingredients and stir until everything is mushed together. I use my hands because it seems easier than a spoon.
3. Pre-heat oven to 350
4. Coat hands in coconut flour ( it makes it easier to roll the mixture into balls). Make ping-pong size balls of sweet potato mixture and put on baking dish. I made about 16 balls total (not gonna lie, I ate some of the dough lol)
5. Cook for 25 minutes.
6. Store in fridge.
7. Enjoy these bombalicious sweet potato balls!
