Chia croutons and "Bread"

I thought High Fat Low Carb would be a lot more difficult than it is. I am finding the perfect substitutes for pretty much anything. I actually haven't even craved bread since I started this journey of mine but I thought it would sound good to have a low carb crouton on my salad. So I decided to make it myself. I left some pieces as bread. Kids ate some with butter and jelly too. I had a plain piece. This is a good recipe!

Ingredients:
1/2 cup chia seeds
1/4 cup coconut flour
1 teaspoon gluten free baking powder
1/4 teaspoon Himalayan pin salt
4 free range, organic eggs
1/2 cup avocado oil or extra-virgin olive oil
Directions:
1. Preheat oven to 350. Spray baking sheet with olive oil. I sprayed aluminum foil and put it on top of a baking sheet.
2. Combine chia seeds, flour, baking powder and salt in a bowl.
3. Whisk eggs and oil in a separate bowl then combine the wet and dry ingredients together.
4. Whisk or use a blender until smooth.
5. Lay out dough on baking sheet and spread evenly with spatula.
6. Bake for 20 minutes or until golden brown on the top.
You can store them on the counter for 2-3 days and they can also be frozen. Enjoy :)
